Harvest Recipe Feature: Fresh Lettuce, Cucumber & Herb Salad

Today, we're combining some of the best ingredients of the season—Lettuce, carrots, cucumbers, and fresh herbs—to create a simple yet flavourful summer salad.

This salad brings the garden to the table in the most fresh way possible, whether you're gathering crunchy cucumbers from the greenhouse, picking carrots from the ground or snipping a handful of basil from your windowsill.


Try this easy dish that is full of taste and uses only ingredients that are fresh from your garden!

Homegrown Cucumber, Baby Leaf & Carrot Salad

Ingredients

🥒 1 large cucumber, thinly sliced or ribboned and add fresh baby lettuce mix
🥕 2 carrots, peeled into ribbons
🌿 A handful of fresh mint or coriander
🍋 Juice of 1 lemon (or use vinegar for tang)
🫒 1 tbsp olive oil
🧂 Salt & pepper to taste
🧄 Optional: a pinch of garlic or sesame seeds for extra flavour


Instructions:

Use a vegetable peeler to create thin ribbons of cucumber and carrot.
Toss into a bowl with freshly chopped herbs and add the lettuce.
Drizzle with lemon juice and olive oil.
Season with salt and pepper, and toss gently to combine.
Serve chilled or fresh for the crunchiest result!
